baked white onions with balsamic vinegar
The other day I passed by the open-market and found out that they were white big onions on sale. They are really huge and sweet. I bought at least a kilo of them and started cooking them with balsamic vinegar. I tell you what they are really yummy! The taste of onions mixed together with the sugar and balsamic vinegar just could not stop you from scooping more and more in your plate. They are really good to accompany with poached white meat, roast beef, or as an antipasto. I will try to write down the ingredient for all of you out there, buonappetitto...
INGREDIENTS
1 kilo of white onion
3/4 cup of good balsamic vinegar
2 1/2 Tb sugar
1/2 cup of water
4 Tb good olive oil
1 teaspoon salt
First cut all the white onions in wedges. Prepare a non-stick round pan and put all the cut onions in the pan, add all the rest of the ingredients and mix them well. Put them in the preheated oven and bake at 190°C for at least 2 hours. Try to flip them in the middle of cooking so that all the onions are well brown. To check whether they are cooked by piercing through them with a fork. Enjoy it....

Last Saturday was the opening of Parabatula (butterfly), in Sardinian dialect, of Alessandra's atelier. The studio is full of gorgeous dresses, wedding gown, kimono, etc...It is also a loving place and opportunity for us, artists, to display our works. I have brought along my bead work to her atelier.
